How Do You Granola? I Make Parfaits with Viki’s Granola

I have yogurt and granola for breakfast almost every morning.  And sometimes I have it for a late night snack too.  My current favorite granola is Viki’s Granola Banana Walnut flavor.

You can use granola for lots of things, like as a topping for Berry Crisp  or to make Granola Crusted Chicken.  But my favorite thing to do with it is to make a quick, healthy, delicious and quite filling breakfast with it.

I use Vanilla Greek Yogurt but that’s just a matter of preference.  You can use your favorite flavor of Greek Yogurt.  I also try to pack as big a health punch in my breakfast as possible so I do a heaping spoonful of protein and fiber filled chia seeds on top of my yogurt.

Ingredients:

vanilla Greek yogurt
your favorite granola
add-ins: strawberries, blueberries and/or chopped dates
chia seeds

For the picture above I layered everything nicely.  But for breakfast, I usually just grab the biggest bowl I can find and pour in the yogurt and pile on the granola, chia and fruit.  Mix and eat!
