Monday’s Money Saving Recipe – Italian Tuna Melts

Italian Tuna Melts

These are soooo yummy!  I usually make a boxed pasta salad to go along with these.  It seems like these have too many ingredients to be “frugal” but other than the fresh parsley, these are ingredients I always have on hand.

  • 1 loaf Italian or French bread
  • 3 6oz cans tuna – drained (I always use chunk light in water)
  • 3 Tbsp EVOO
  • 1 1/2 tsp lemon juice
  • 1 Tbsp finely chopped fresh parsley
  • 1/4 canned black olives sliced or chopped
  • salt and pepper
  • 4 oz shredded mozzerella

Slice bread into 6 equal slices.    Flake tuna in bowl.  Stir in oil, lemon juice, parsley and olives.  Season with salt and pepper.  Spread mixture evenly over bread slices and sprinkle with cheese.
Broil about 2 minutes until cheese is bubbling.  Serve immediately.

How easy is that??  You can also use chopped sun-dried tomatoes and roasted red bell pepper slices as toppings.  Don’t like tuna?  Use canned chicken!

Another option for the canned chicken is to leave out the lemon juice and olives.  Add some chopped pre-cooked bacon to the canned chicken, oil, salt & pepper and olives, put on bread and top with chedder cheese!  Broil the same way.

I have made these several ways at one meal – the regular recipe, the regular recipe with the extra toppings, the regular recipe with chicken instead of tuna, and the modified chicken recipe – and served them as a “variety platter”.  This is a good party/entertaining idea!!
