“Kid-Approved” Healthy Spinach Muffins

Trying to get kids to eat veggies is HARD.   I’ll try anything to get more veggies in G.  Fortunately he LOVES these spinach muffins.  Not only is he getting a veggie but he’s getting a dose of fruit too!

Ingredients:

1 cup pureed spinach
1 teaspoon vanilla
2 eggs
1/4 cup vegetable oil
1/2 cup applesauce/cinnamon applesauce* or mashed ripe banana
1 TBSP honey (optional)
2 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

*we used cinnamon applesauce because that’s what we buy

G likes to add chocolate chips to his.  If 4-5 chocolate chips is what it takes to get him to eat a spinach muffin, then I’m ok with that!  (add the chocolate chips after the batter is mixed and stir gently – or you can do what we do and just drop a few directly into the muffin cup.  I don’t like chocolate chips in mine so this lets us keep mine and his separate.)

Directions:

Preheat Oven to 350 degrees.  Spray Muffin Tin or line with Cupcake Liners

Add 1 cup of pureed spinach to blender with vanilla, eggs, oil and applesauce/banana (and honey if using).  Blend until mixed.

Combine dry ingredients in a large bowl.

Add mixed wet ingredients to dry ingredients in bowl.  Stir until batter forms.  Fill muffin cups to 2/3 full.

Bake 20 minutes or until toothpick inserted comes out clean.

These are great warm from the oven with a glass of milk!
