Leftover Night Recipe: Sloppy Joe Casserole

sloppy-joe-casseroleUsing up leftovers is a great way to save money.  If you eat leftovers even just two nights a week that’s two less meals you are buying ingredients for and cooking.   Trying something different with your leftovers is a way to make them not seem like leftovers.  In fact, sometimes, it can seem like a brand new dish! One thing we recently tried is Sloppy Joe Casserole.   We like Sloppy Joes but honestly, we always have half leftover and as much as we like them, that second night is like, “Really, sloppy joes again?” Sloppy Joe Casserole to the rescue!

The ingredients are simple.  We always have shredded cheese in the fridge.  And for the noodles, you really can use whatever kind you happen to have.  I had some rotini so that’s what I used.

Ingredients:

Sloppy Joe leftovers
Rotini Noodles (or whatever you have on hand)
Shredded Cheddar Cheese
Chopped onion (optional)
Green onions for garnish (optional)

 

Directions:

Reheat Sloppy Joe leftovers (I just warmed them up in the microwave.  They don’t have to be hot hot, but I didn’t want them refrigerator cold).  Boil noodles and drain.  Turn on over to 375 degrees.

Add noodles to baking dish.  Throw in some chopped onion (completely optional but we do like things extra onion-y).  Add a handful or two of cheese.  Top with Sloppy Joe leftovers.  Mix

Put in the oven for 10 minutes (just trying to get everything good and hot)

Remove from the oven.  Add more cheese on top (and green onions – I grow some on my windowsill so they get added to a lot of things!)

Serve and Enjoy!
