Campbell’s Skillet Sauces for dinner tonight, anyone?

 

I have to admit, a lot of nights, cooking dinner seems more like torture than a pleasant experience.  For 7 years now, I’ve pretty much just cooked for 2.  Bug is just now old enough to eat what we eat, but many nights, I’m still making two separate dinners.  Bug may eat the sides and veggies I’ve prepared for our meal but since he’s 4 and picky, I make a different meat for him.  He won’t eat anything with any spice or flavor or sauce.  So in addition for cooking for me and Hubs, I’m also cooking chicken nuggets, fish sticks or turkey franks for Bug to eat as well.  Cooking for two has always been tough because most recipes make too much and cooking for two and a half is even worse because it takes so much more time.  So I’m always looking for recipes and ideas that have me in the kitchen for as short a time as possible, that make just enough for 2, and that require as few ingredients and dirty dishes as possible!

Well, it looks like Campbell’s heard my thoughts!

Campbell’s recognizes that people want adventurous, flavorful weeknight meals, but also need options that fit within their time constraints. That’s the beauty of Campbell’s Skillet Sauces. These new sauces provide a quick and easy way to get a delicious dinner on the table in about 15 minutes.

Campbell’s Skillet Sauces are ready in just 15 minutes, with three easy steps:

    1.  HEAT.  Heat oil in skillet over medium/high heat.
    2.  ADD.  Add your protein or vegetables and cook until browned.
    3.  STIR.  Stir in sauce and heat to boil. Reduce heat and cover for five minutes or until protein is cooked through and/or vegetables are tender.

Campbell’s sent me a selection of Skillet Sauces to try.  I wanted to make Chicken Marsala with the Marsala sauce but Hubs loves anything with a kick to it and since I wanted his feedback on it, I picked the Creamy Chipotle sauce to use first.  I cubed and cooked some chicken breasts, tossed it and the sauce in a skillet and let it heat through.  While that was cooking I made some rice and heated a can of black beans.  Fasted than you can blink, dinner was on the table!  I didn’t have to use the oven which made it easier to prep a separate dish for Bug to eat.

Since I was cooking the chicken, I had control over how much.  I knew how much I needed to make for the two of us, I tossed in a little extra and there was plenty of sauce to go with it.  We both had our fill and there was enough for Hubs to take to work for lunch the next day!

It was tasty and flavorful (according to Hubs it had just the right amount of spice) and easy to make!  Served over rice with beans on the side made it the perfect meal.  It doesn’t get much easier than that!
