I am aware that this is not exactly like bread and yes, it is a lot like cake, but it’s an easy way to make a delicious breakfast or treat when you have some bananas that are a little past their prime. I always have the other necessary ingredients on hand.
Ingredients
- box of your favorite YELLOW cake mix
- 3 ripe bananas
- 1 egg
- 1/3 cup of vegetable oil OR applesauce*
- chocolate chips, nuts or other additions (optional)
*switching oil for applesauce is an easy healthy swap. You can also use olive oil for baking.
I think the thing I love most about this recipe is that it’s easy to remember. I don’t have to break out a recipe every time I make it. I remember the amounts by “dividing by 3”. THREE bananas, ONE egg, ONE-THIRD cup of oil or applesauce. That was easy.
Mix your ingredients together (saving any additives like chocolate chips to add after your batter is well-blended.) Bake according to the instructions on your cake mix box.
If you’re doing loaf pans, you’ll likely need to double the cook time listed for baking a cake. BUT this recipe makes GREAT MUFFINS! So you can use the cupcake instructions on the cake box and turn them into easy muffins!
