For the Fourth of July, there isn’t anything more American than smoked meat to celebrate. Whether it’s a holiday feast for just the family or the whole neighborhood, a big barbecued brisket is the perfect way to bring everyone together for a day of celebrating the red, white and blue.
Rocky Stubblefield, grandson of Stubb’s Legendary Bar-B-Q founder C.B. “Stubb” Stubblefield, has tips (see attached) and original recipes for creating the perfect brisket to serve on its own or in a variety of ways to please every partygoer – from sliders to tacos and even nachos.
So you can do the same ‘ol thing for your 4th of July grilling this year, OR you can try something a little different with one of these great brisket recipes from Stubb’s! You can do Stubb’s Bar-B-Q Brisket smoked low and slow and serve it as is OR you can turn it in to Brisket Walking Nachos.
Rocky’s Brisket Tips
o Get a good crust: One of the most delicious parts of a brisket is the flavor crust. Make sure you rub the entire brisket generously with Stubb’s Beef or Bar-B-Q Spice Rub 15-20 minutes before the meat goes on the grill or in the smoker.
o Fat side up: Whether in your smoker or on a charcoal grill, place the brisket fat-side up so that the fat drips down into the meat and it stays moist.
o Slicing is important: Make sure you cut against or across the grain of the brisket for tender slices. Not sure where the grain is? It’s easier to see on the raw meat before it’s rubbed, so cut a notch when prepping to help guide once it’s cooked.
o Add the sauce: As we say in Texas – it’s not done ‘til you add the sauce! Serve on the side for dipping or drizzle it over the top.
Stubb’s Brisket Tacos
Prep Time: 15 minutes
Cook Time: 4 minutes
Ingredients:
12 bags (1 ounce each) waffle-cut, rippled or kettle style cooked potato chips
3 cups shredded Cheddar cheese, divided
2 pounds shredded Stubb’s BBQ Brisket, divided
3/4 cup Stubb’s® Original Bar-B-Q Sauce, divided
3/4 cup pico de gallo, divided
3/4 cup prepared guacamole, divided
Instructions:
Place 1 opened bag of chips in a small disposable paper food tray. Top with 1/4 cup cheese. Microwave on HIGH 30 seconds or until cheese is melted.
Top cheese with 1/4 cup shredded brisket, 1 tablespoon Bar-B-Q Sauce, 1 tablespoon pico de gallo and 1 tablespoon guacamole. Repeat with remaining ingredients.
Makes 12 servings.
