Recipe: Baked Smashed Potatoes

These have to be the yummiest things I’ve ever pulled out of my oven!

Smashed Baked Potatoes

  • Red or New Potatoes (as many as you want to make)
  • Salt and Pepper
  • Shredded Cheddar Cheese (Sharp, if you like it, otherwise, mild is fine)
  • Green onions, chopped
  • Precooked Bacon Slices, heated and crumbled
  • Sour Cream

Boil potatoes until they are tender.   Line a baking sheet with aluminum foil and lay potatoes out.  Mash them with a potato masher.  Press each one until skin breaks just slightly.  The trick is to keep them partially whole so you need the bottoms to stay intact.

Sprinkle with salt and pepper to taste.  Add crumbled bacon and chopped green onions.  Sprinkle liberally with cheese.  Bake in over at 350 degrees until cheese is melted.  Serve with sour cream and enjoy!
