Lunchbox Ideas – Sweet Potato Chips

   Each week Just Trying To Save Money will bring you a new Lunchbox Idea to help you have healthier Lunchbox options and to keep your kiddos interested in their lunch!

One of my biggest goals this school year is to provide my girls with healthier lunchbox options and to offer them more variety. Last year we seemed to get in a rut of packing the same lunches every week and I found my girls asking more by the end of the year for something new or to buy their lunch at school. With all 3 of our girls attending school this year, packing lunches most of the week is going to be the most cost effective way for us. So I thought I would share with you some recipes I find to spice up our girls lunches! So each Friday, keep an eye for a new recipe for your kiddos lunchbox!
This week I found….
Sweet Potato Chips

Ingredients

2 medium sweet potatoes
2 tbsp. olive oil
Salt and pepper
Paprika

 
Instructions

Preheat the oven to 450 degrees. Peel 2 medium sweet potatoes and slice as thinly as possible. Toss with 2 tablespoons of olive oil and spread in a thin layer on a cookie sheet. Sprinkle with salt, pepper, and paprika. Bake about 20 minutes or until crispy. Makes 4 servings.
