Turkey Chili
Makes 8 servings at 86 cents each
2 tablespoons vegetable oil
1 medium onion, diced
3 cloves garlic, chopped
1 green pepper, diced
1/4 cup chili powder
1 1/2 pounds ground turkey or ground beef
1 can (28 oz) diced tomatoes
1 can (8 oz) tomato sauce
1/4 cup ketchup
1/4 to 1/2 teaspoon cayenne pepper
1 packet (.19 oz) instant beef-flavored broth granules
1/2 teaspoon salt
1 can (19 oz) red kidney beans, drained and rinsed
1. Heat oil in large pot over medium heat. Add onion, garlic, green pepper and chili powder; saute for 10 minutes or until vegetables are tender. Add turkey; cook for about 6 minutes, breaking up chunks as you go.
2. Add diced tomatoes, tomato sauce, ketchup, cayenne, instant broth, and salt; simmer, uncovered, stirring occasionally, for about 20 minutes. Add kidney beans; cook for 4 minutes or until heated through. Serve topped with sour cream and green onions, if desired.
Vegetarian Chili Makes 8 servings at 61 cents each
2 tablespoons vegetable oil
1 large onion, chopped
4 cloves garlic, minced
3 tablespoons chili powder
1 green bell pepper, diced
1 red bell pepper, diced
1 medium zucchini, diced
1 medium yellow squash, diced
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 can (14.5 oz) stewed tomatoes
1 can (11 oz) corn, drained
1 can (15.5 oz) black beans, drained and rinsed
1/4 teaspoon salt
1. Heat oil in large pot over medium heat. Add onion, garlic and chili powder and sauté for 5 minutes. Add bell peppers; sauté 5 minutes. Add zucchini, squash, oregano and cayenne; saute for 5 minutes. Add tomatoes; cook 10 minutes. Stir in corn, black beans and salt; cook for 5 minutes or until heated through.
2. Serve with sour cream, cooked rice, and shredded cheese, if desired
