Monday’s Money-Saving Recipe – Homemade Frozen Pancakes

Okay, so I happen to LOVE my pancake recipe.  And it’s not a big secret.  In fact, you’ve probably seen it.  It’s right there on the back of the Bisquik box.  :)

  • 2 Cups Bisquik
  • 2 eggs
  • 1 cup milk
  • 2 Tbsp sugar
  • 2 tsp vanilla extra

 It makes really good pancakes.  Pancakes are a big hit at my house.  Hubs has always loved pancakes.  “I want pancakes” is an inside joke with us….dating back to our honeymoon, I think.  I cut Bug’s pancakes with my train cookie cutter.  So Bug likes “train cakes” as he calls them.

As much as homemade (well, semi-homemade, I suppose – since I am using Bisquik!) are such a special treat around here and so loved I never thought, until recently, that I could freeze my pancakes.  I was heating up the last two frozen Aunt Jemima pancakes the other morning thinking, “Uh, oh.  I’m not going to have any tomorrow morning for Bug’s “train cakes”.  And suddenly, a light bulb went off in my head.  The people that make those frozen pancakes, make them just like I do and then freeze them.  So why can’t I freeze mine???  So that’s what I did.  I made a big batch that night and froze them.  I popped some in the toaster the next morning and they were great!

Here are tips for freezing your pancakes (you can do waffles too!):

  • remove from skillet/griddle/waffle iron and lay out on plates or paper towels
  • let cool completely 
  • place in freezer bag (you can put foil or wax paper between them to keep them from sticking but I didn’t have any problems with them sticking) and squeeze out extra air
  • pop in freezer
  • When you are ready to eat, just toast and enjoy!
