This recipe was born of a need to use some ingredients and sheer luck. :) When I season ground beef for tacos I always make twice what we need (seasoning and all) and bag up half and freeze for tacos another day. So I had the taco meat in the freezer and I wanted to use it, but we were lacking the other taco necessities, mainly shells. So here is what I devised!
Cheesy Taco Casserole
1 lb ground beef
1 Taco Seasoning packet
1 box elbow noodles (I didn’t use the whole box – you can adjust based on your needs)
1 jar Ragu cheese sauce (I used double cheddar)
1 tomato, chopped
Brown & Crumble Ground Beef and Season it per packet instructions. Boil noodles until just tender and drain. Pour Ground Beef into Noodles and mix. Pour into casserole dish. At this point, I poured some of the cheese sauce in and mixed it up. Then I added the chopped tomato and topped it all with the remaining cheese sauce.
Bake on 350 degrees for 10-15 minutes. Just long enough to melt the cheese and make it bubbly.
