My money-saving recipe for today is actually cheese dip. But made with some ground beef, it suffices as a meal!
- 1 large loaf of cheese (Velveeta is good but you can find store brand cheaper – I mean, we are being frugal! Honestly, I can’t tell a difference…)
- 2 cans Rotel (or any brand of diced tomatoes with onions and green chilies)
- 3/4 – 1 lb ground beef (have never tried this with ground turkey…)
Cut cheese loaf up into large cubes and put in slow cooker on high. Add Rotel.
Brown and crumble hamburger meat. Drain grease. Add to slow cooker.
Continue cooking on high, stirring as needed until cheese is completely melted.
Serve poured over tortilla chips.
You can make this the main dish on “Mexican night” and serve a side of Spanish rice or refried beans. You can top your chips and dip with lettuce, sour cream and jalapenos for some rockin’ nachos!
I also make this without the hamburger meat when we have hotdogs sometimes. It’s really good over hotdogs with some hotdog chili = Chili Cheese Dogs.
You can also serve this with a can of Hormel chili and put both over the chips for Chili Cheese Nachos!

Another delicious recipe is to take a can of Hormel Chili and a block of cream cheese and heat it up. Hands down the best dip I've ever had!
