Let’s get real… life gets crazy! But, dinner doesn’t have to be. These delicious fillets are all made with wild-caught Alaska Pollock, plus real bold ingredients like chilies, peppercorns, and crushed tortilla chips for an extra pop of flavor that makes a family-pleasing dinner time solution.

I tried the Gorton’s Roasted Garlic & Italian Herb Artisan Fillets.  I served them with a Squash and Pasta Casserole, Stuffed Mushrooms and some Gorton’s Popcorn Shrimp (my five year old really likes those).  It was all delicious!

My Squash Pasta Casserole

This is really just a dish I threw together based off one of the suggestions on the Gorton’s website.  I was lacking the ingredients to make it as listed but I tweaked it to fir what I had.  It was really good and it paired well with the fish!

3 Yellow Squash
1 Zucchini Squash
Shredded Mozarella Cheese
2 cloves garlic – minced
olive oil
bowtie pasta (or penne – all I had were veggie bowties to use)

Mince garlic and slice squash and zucchini.  Toss together with olive oil.  Pour in casserole dish and cover.  Bake 400 until barely tender.  (15 minutes or so)  I baked it while the fish was baking.  You can adjust degrees/time based on what you’re also baking.

Prepare pasta.

Remove veggies from oven.  Toss in cooked, drained pasta.  Add 1 cup shredded mozarella cheese.  Toss.  Top with another handful of cheese. Put back in the oven to melt cheese (about 5 minutes)

Serve and enjoy!
